Sous Chef

Full-time permanent position allowing more flexible working with an annualised hours contract.

We are currently looking to recruit an experienced Sous Chef to join our team to assist in the running of our busy Spikes Bar kitchen. You will be assisting the Senior Sous in leading a team to produce the highest standards of food for our members and guests. The menus are seasonally led and focus on some of Scotland’s signature ingredients from the very best seafood, beef, and wild game. With an on-site kitchen greenhouse and garden there is an abundance of produce to create that special dish.

Shift Pattern5 days over 7 straight shifts – rota will be done up to 2 weeks in advance
Essential RequirementsA driving license is essential, and candidates must be able to get to and from the club using their own transport.

The right to live and work in the UK is essential.

  • You will have experience of working in a similar sized organisation, Loch Lomond Golf Club has 54 rooms over 7 lodges throughout the estate with 3 onsite Restaurants.
  • You will have experience of working in a busy open all day offering gastro pub fayre environment with approx. 90 breakfasts, 85 lunch, 55 dinners. Including a bespoke 9th tee operation and prebooked BBQ’s and alfresco dining at lodges.
  • You will be able to display a high level of creativity through the daily changing specials board.
  • You will be expected to consistently push the standards of food production and be a positive minded trainer who can inspire and teach the junior members of the team.
  • Be eager to progress to the next level in their culinary journey learning and working along side a highly experienced brigade of 14 Full time Chefs
  • Be able to bring a wealth of knowledge, skill, and passion to encourage the best in your team and support the Chef’s in the Spikes kitchen.
  • Display high levels of attention to detail from preparation to execution of all dishes, whilst ensuring all orders are delivered in a timely and efficient manner.
  • Have experience and the ability to adapt and accommodate the needs of members who travel to Loch Lomond from around the world.
  • You should be creative, and business focused on achieving margins set, whilst mindful of operational costs that go hand in hand in running a kitchen.
  • This is a fast-paced environment so a good temperament and calm nature whilst under pressure is required.
